RECIPE: Anna's Custard Squares (Chapter 9)
In NZ we call these beauties 'custard squares', but they're also known as:
custard slices
vanilla slices
The picture shows the end result - before cutting it into squares.
Ingredients:
1 packet of ready-rolled flaky pastry
1 1/2 cups milk
1 tablespoon custard powder
vanilla essence
2 tablespoons cornflour
75g icing sugar
60g butter
Passionfruit icing:
passionfruit pulp
1 cup icing sugar
2 teaspoons butter
drops of water
Method:
Preheat oven to 180 degrees.
Prick two sheets of pastry and place on oven trays. Cook until lightly golden.
Bring milk to boil (in a pot on the stove) with rest of ingredients, stir until thick.
Pour custard on top of one sheet of cooked pastry.
Place other sheet of pastry on top. Make runny passionfruit icing and pour over top.
Refrigerate until custard is set.
Cut into squares and serve!
