RECIPE: Anna's Custard Squares (Chapter 9)

In NZ we call these beauties 'custard squares', but they're also known as:

  • custard slices

  • vanilla slices

The picture shows the end result - before cutting it into squares.

Ingredients:

  • 1 packet of ready-rolled flaky pastry

  • 1 1/2 cups milk

  • 1 tablespoon custard powder

  • vanilla essence

  • 2 tablespoons cornflour

  • 75g icing sugar

  • 60g butter

Passionfruit icing:

  • passionfruit pulp

  • 1 cup icing sugar

  • 2 teaspoons butter

  • drops of water

Method:

  • Preheat oven to 180 degrees.

  • Prick two sheets of pastry and place on oven trays. Cook until lightly golden.

  • Bring milk to boil (in a pot on the stove) with rest of ingredients, stir until thick.

  • Pour custard on top of one sheet of cooked pastry.

  • Place other sheet of pastry on top. Make runny passionfruit icing and pour over top.

  • Refrigerate until custard is set.

  • Cut into squares and serve!
