RECIPE: Sophia Giovanni's Homemade Pizza (Chapter 6)

Homemade pizzas are delicious - you can put whatever you like on them - and they're better for you than ones that come out of home-delivered boxes.
In the 70s, pizza was pretty exotic in small town NZ. Here's Sophia's recipe:
Ingredients:
1 cup plain flour
1 cup wholemeal flour
2 teaspoons dry yeast
1/2 teaspoon each of sugar & salt
2 tablespoons unsweetened yoghurt
Toppings:
tomato sauces - Watties and homemade
grated onion
chopped herbs: rosemary, thyme, parsley
chopped spinich
grated cheese
thinly sliced roast meat
sliced tomatoes
sliced mushrooms
Method:
Sift flour into bowl, add yeast, sugar, and salt.
Make a well in centre and add water and yoghurt.
Knead for 5 mins, or until smooth and elastic
Cover with a teatowel and rest dough for 1/2 hour or until doubled in size.
Preheat oven to 180-200C.
Put baking paper on top of an oven tray and roll out dough onto the paper (saves trying to move it later).
(Now, put your favourite toppings on.) First, spread tomato sauce over base with the back of a spoon. Grate some onion on top and sprinkle chopped fresh herbs. Sprinkle with grated cheese, chopped spinich, and add slices of meat, tomatoes, and mushrooms.
Cook for about 15 mins or until golden around the sides (watch carefully!).
