RECIPE: Elizabeth's Coconut Ice (Chapter 12)

Didn't Jane see something 'pink' poking out from under the pie in her father's plate?

What Jim deemed 'kid's food' is actually too delicious for any age to resist.

Here is a simple recipe for the sweet:

Ingredients:

100g butter

1 teaspoon vanilla essence

1/2 cup milk

4 cups icing sugar

2 cups coconut

3/4 teaspoon raspberry essence

red food colouring

Method:

  • Cut the butter into cubes and place in a saucepan.

  • Add milk, vanilla, and icing sugar.

  • Boil until it reaches the 'soft-ball' stage - a drop of the mixture in a bowl of cold water forms a ball.

  • Allow to cool for 5 minutes.

  • Beat until smooth.

  • Stir in coconut.

  • Put half the mixture in a greased dish (white).

  • Add 2 drops of red colouring and raspberry essence to second half, mix through, and place on top of the white in the dish.

  • Refrigerate until set.
